Big Blue - Panini of Roast Beef (rare, of course), Bleu cheese, three onion marmalade (simple to make) and fresh tomato

or

The Perfect 10 - Prosciutto di Parma, Fontina cheese, baby spinach, roasted pepper, black olive & basil spread with oven-dried tomatoes (yeah, I know it's not blue, but it's perfect like Big Blue's #10).
